Cheesy Roasted Garlic Bread

Instructions
Roast the garlic
Preheat oven to 200°C. Cut the top off the garlic head, drizzle with olive oil, season with salt and pepper, wrap in foil and roast for 30 minutes until soft and golden.
Make garlic butter
Squeeze roasted garlic cloves out of their skins into softened butter. Mix well until smooth and creamy.
Prepare the bread
Slice the baguette lengthwise. Spread the roasted garlic butter generously on both halves.
Add cheese and bake
Sprinkle grated mozzarella cheese evenly over the buttered bread. Bake at 200°C for 8-10 minutes until cheese is melted and bubbly and edges are golden.
