Instructions
Prepare and roast spices
Heat oil in a pan and roast dried red chilies until fragrant.
Sauté onions
Add sliced onions and curry leaves to the pan, sauté until golden brown.
Add ginger garlic paste and tomatoes
Stir in ginger garlic paste and chopped tomatoes, cook until tomatoes soften.
Add spices and chicken
Add turmeric, chicken masala, coriander powder, chili powder, and salt. Mix well, then add chicken pieces.
Cook chicken
Stir-fry chicken until it changes color and is coated with the masala.
Add water and simmer
Pour in water, cover, and simmer until chicken is cooked through.
Finish with coconut
Add grated coconut and cook for a few more minutes until the gravy thickens.
Serve hot
Turn off the heat and serve the curry hot with rice or bread.
