Loaded Potato Soup

vegetable stock
400 ml
vegan cheese

Toppings
smoked tofu
400 g
paprika powder
1 tsp
agave syrup
1 tbsp
spring onions
1 handful
chili flakes
1 tsp
Instructions
Prepare smoked tofu
Dice the smoked tofu and sauté. Season with agave syrup and paprika powder and set aside.
Sauté vegetables
Sauté the onions and celery.
Make roux
Add the flour, butter and cream and bring everything to the boil while stirring.
Simmer soup
Add the potatoes and vegetable stock and simmer for 7 minutes.
Finish soup
Stir in the vegan cheese and season. Serve with smoked tofu and other toppings.
