Lemon Herb Caesar Salad
lettuce (chopped)

lemon herb Caesar dressing

Parmesan cheese (freshly grated)

Instructions
Season the chicken
Season chicken with salt, pepper, garlic powder, onion powder and smoked paprika powder.
Prepare egg wash
In a bowl crack eggs, add water and whisk until smooth, set aside.
Prepare dry batter
In another bowl mix all purpose flour, salt, pepper, garlic powder, onion powder, smoked paprika powder.
Prepare breading mixture
In a separate bowl add panko bread crumbs, parsley, basil and lemon zest.
Coat the chicken
Coat the seasoned chicken fillets in egg wash, then dip them in dry flour, followed by egg batter. Finally, coat them in bread crumbs.
Fry the chicken
Heat oil in a pan until it reaches 175°C. Add the chicken and cook for 4-5 minutes, flipping sides in between, until the chicken reaches an internal temperature of 74°C.
Make the dressing
Mix all the ingredients listed above to make lemon herb Caesar dressing.
Prepare the salad
Add lettuce to some dressing and reserve remaining for later use.
Toast the bread
Apply butter to the bread and toast until it's crisp.
Assemble the sandwich
Spread reserved lemon herb Caesar dressing on one side of the bread. Add the breaded chicken on top. Top with some lemon herb Caesar salad. Garnish with grated Parmesan cheese, close and serve.
