Prepare cinnamon sugar chunks

Mix butter, brown sugar, cinnamon and flour to create sweet cinnamon chunks that will melt into the cookies.

Cream butter and sugar

Beat softened butter with brown sugar until light and fluffy.

Add wet ingredients

Beat in the egg and vanilla extract until well combined.

Combine dry ingredients

In a separate bowl, whisk together flour, baking powder, cinnamon and salt.

Mix wet and dry ingredients

Gradually add dry ingredients to wet ingredients and mix until just combined.

Fold in chocolate chips

Gently fold white chocolate chips into the cookie dough.

Chill dough and portion

Chill dough for 15 minutes, then portion into 24 balls, pressing cinnamon chunks into each cookie.
