Gluten-Free Starbucks-Style Cake Pops

Cake Base
gluten-free flour blend (room temperature)

Instructions
Preheat oven
Preheat oven to 175°C and line a 20cm square baking pan with parchment paper.
Mix dry ingredients
In a large bowl, whisk together gluten-free flour and baking powder until well combined.
Cream butter and sugar
In another bowl, cream softened butter with granulated sugar until light and fluffy, about 3 minutes.
Add eggs and vanilla
Beat in eggs one at a time, then add vanilla extract, mixing until combined.
Combine wet and dry ingredients
Alternate adding the flour mixture and milk to the butter mixture, beginning and ending with flour. Mix until just combined.
Bake the cake
Pour batter into prepared pan and bake for 25-30 minutes until a toothpick inserted in center comes out clean.
Cool the cake
Allow cake to cool completely in the pan, about 30 minutes.
Crumble the cake
Once cooled, crumble the cake into fine crumbs using your hands or a food processor.
Form cake balls
Add 2-3 tablespoons of frosting (if using) and mix until mixture holds together. Roll into 2.5cm balls and place on parchment-lined baking sheet.
Chill cake balls
Refrigerate cake balls for at least 30 minutes to firm up.
Melt white chocolate
Melt white chocolate chips with coconut oil in microwave in 30-second intervals, stirring between each, until smooth.
Dip cake pops
Insert cake pop sticks into chilled balls, then dip each ball into melted chocolate, tapping off excess. Immediately add sprinkles before chocolate sets.
Set the chocolate
Place dipped cake pops upright in a styrofoam block or cake pop stand and allow chocolate to set completely.

Store in airtight container. Can be frozen for up to 1 month. Thaw overnight in refrigerator before serving.
