Prepare base liquids
Place peach puree and lemon juice in a shaker.

Muddle basil
Add basil leaves to the shaker and muddle very gently.

Muddle gently to release aroma without tearing leaves

Make honey syrup
Place honey with half a teaspoon of water in a small dish and microwave briefly (5 seconds max), then mix with a spoon.

Shake the cocktail
Add honey syrup and ice to the shaker, replace lid and shake well.

Strain over ice and top with kombucha or soda.
