Instructions
Melt chocolate and butter
Melt chopped dark chocolate and butter together in a heatproof bowl over simmering water or in microwave in 30-second intervals, stirring until smooth. Let cool slightly.
Beat sugars and eggs
In a large bowl, beat granulated sugar, brown sugar, and eggs with electric mixer until pale and fluffy, about 3-4 minutes.
Add chocolate mixture
Add cooled chocolate-butter mixture and vanilla extract to the egg mixture. Beat until combined.
Combine dry ingredients
In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
Make cookie dough
Gradually fold dry ingredients into wet mixture until just combined. Fold in chocolate chips. Cover and chill dough for 30 minutes.
Preheat oven and prepare baking sheet
Preheat oven to 180°C (350°F). Line baking sheet with parchment paper.
Shape and bake cookies
Scoop tablespoon-sized portions of dough, roll into balls, and place 2 inches apart on baking sheet. Bake for 10-12 minutes until edges are set but centers are still soft.
Cool cookies
Let cookies cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
Storage
Store in airtight container. Excellent for freezing - thaw at room temperature.
