Prepare the sandwich base

Place mozzarella between two slices of sourdough bread to create a cheese-stuffed sandwich.

Form the beef patties

Divide the lean beef mince into two equal portions and shape into patties.

Prepare vegetables and aromatics

Dice the shallot and jalapeño, then mince the garlic cloves.

Mix the special sauce

Combine ketchup, light mayo, mustard, and white vinegar in a bowl and mix well.

Toast the sandwich

Spray both sides of the sandwich with cooking spray and air fry at 200°C for 10 minutes until golden and crispy.

Cook the smash patties

Heat a pan over medium-high heat. Smash the patties in the pan and season with salt and black pepper. Cook until browned on both sides.

Caramelize the vegetables

In the same pan, add shallot, jalapeño, garlic, smoked paprika, salt, and black pepper. Cook until soft, sticky, and caramelized.

Assemble the toasty

Open the toasted sandwich. Spread sauce on one side, add the double patties, caramelized relish, and more sauce on the other side. Close the sandwich.
