Prepare ingredients

Season the steaks generously with salt and black pepper on both sides. Let them come to room temperature. Peel and cut potatoes into fries.

Fry the potatoes

Heat oil in a deep pan or wok. Fry potatoes in batches until golden and crispy. Remove and drain on paper towels. Season with salt.

Cook the steak

Heat a heavy pan over high heat with olive oil. Sear steaks 3-4 minutes per side for medium-rare. Add butter and garlic, baste the steaks. Rest for 5 minutes.

Make peppercorn sauce

In the same pan, sauté shallots. Deglaze with brandy. Add beef broth and reduce. Stir in cream and green peppercorns. Simmer until thickened.
