Instructions
Prepare apple pie filling
Cook the diced apples with sugar, spices, and lemon juice until softened, then thicken with cornstarch.
Cool the filling
Let the apple filling cool completely before using in cookies.
Cream butter and sugars
Beat softened butter with both sugars until light and fluffy.
Add egg and vanilla
Mix in the egg and vanilla extract until well combined.
Combine dry ingredients
Whisk together flour, baking powder, baking soda, salt, and cinnamon.
Form cookie dough
Gradually add dry ingredients to wet mixture and mix until dough forms.
Chill the dough
Cover and refrigerate dough for at least 30 minutes.
Shape the cookies
Scoop dough into balls, flatten slightly, and create an indentation for the filling.
Add filling to cookies
Place a spoonful of cooled apple filling into each cookie indentation.
Bake the cookies
Bake at 180°C until golden brown around the edges.
Cool the cookies

Drizzle with caramel
Drizzle cooled cookies with caramel sauce before serving.
