Mix dry ingredients

In a large bowl, whisk together the flour, sugar, baking powder and salt.

In another bowl, whisk the egg, milk and melted butter until combined.

Make the batter

Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are fine.

Heat a non-stick pan or griddle over medium heat. Lightly grease with butter if needed.
