Instructions
Mix dry ingredients
In a large bowl, whisk together the flour, sugar, baking powder and salt.
Combine wet ingredients
In another bowl, whisk the egg, milk and melted butter until combined.
Make the batter
Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are fine.
Heat the pan
Heat a non-stick pan or griddle over medium heat. Lightly grease with butter if needed.
Cook the pancakes
Pour 60 ml of batter per pancake. Cook until bubbles form on the surface and the edges look set, then flip and cook the other side until golden.
Serve
Serve hot with butter, maple syrup or honey.
