Marinate the salmon

Cut salmon into bite-sized cubes. In a bowl, mix soy sauce, sesame oil, salt, and rice vinegar. Add salmon cubes and gently toss to coat. Let marinate for 5-10 minutes.

Arrange lettuce leaves at the bottom of serving bowls. Add a layer of cooked rice on top.
