Instructions
Prepare the beef
Score the beef roast lightly and rub it with salt, half the minced garlic, and grated ginger.
Make the spice rub
Mix all the dry spices together with the remaining garlic and ginger.
Marinate the beef
Coat the beef completely with the spice mixture and let it marinate for at least 30 minutes.
Sear the beef
Heat oil in a heavy pot and sear the beef on all sides until browned.
Sauté aromatics
Remove beef, then sauté onions, tomatoes, and chilies in the same pot until softened.
Braise the beef
Return beef to the pot, add water to cover halfway, cover and simmer gently for 2.5 hours until fork-tender.
Reduce the sauce
Remove beef and reduce the sauce over high heat until thickened.
Rest and serve
Slice the beef against the grain, pour sauce over, and serve hot with rice or naan.
