Butterfly shrimp and season

Butterfly the white shrimp by cutting along the back and removing the gut. Then mix with egg yolk, salt, white pepper and rice wine.

Prepare dressing

Combine Japanese mayonnaise, wasabi paste, lemon juice and sugar in a mixing bowl. Stir until smooth.

Coat shrimp

Coat the shrimp evenly with cornstarch and tap off excess powder.

Fry shrimp

Heat the oil to 170-180°C over medium-low heat. Deep fry the shrimp for about 30 seconds until golden brown and cooked through.

Mix with dressing

Transfer the fried shrimp to the mixing bowl with the dressing and toss well to coat. Serve immediately.
