Instructions
Preheat oven
Preheat oven to 220°C and line a baking sheet with parchment paper.
Season fries
Toss potato fries with olive oil, paprika, garlic powder, and salt until evenly coated.
Bake fries
Spread seasoned fries in a single layer on the baking sheet and bake for 25-30 minutes, turning halfway through.
Prepare toppings
While fries are baking, slice jalapeños and scallions, dice tomatoes, and chop cilantro.
Assemble loaded fries
Remove fries from oven, top with shredded cheddar cheese, jalapeños, and return to oven for 3-5 minutes until cheese melts.
Add final toppings
Top with sour cream, diced tomatoes, sliced scallions, and fresh cilantro. Serve immediately.
