Prepare potatoes

Wash and peel the potatoes, then cut them into uniform thin fries about 0.5 cm thick.

Soak potatoes

Place cut fries in a bowl of cold water and soak for 20-30 minutes to remove excess starch for crispier results.

Heat oil

Heat peanut oil in a deep pot or fryer to 160°C (325°F) for the first fry.

Drain and pat dry the soaked fries. Fry in batches for 3-4 minutes until soft but not browned.
