Creamy Parmesan Pasta with Tomato Sauce

Instructions
Cook the pasta
Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve 1/2 cup pasta water before draining.
Sauté aromatics
Heat olive oil in a large pan over medium heat. Add diced shallot and cook until soft, about 2-3 minutes. Add minced garlic and cook for another 30 seconds.
Build the sauce base
Add red pepper flakes and tomato paste. Cook for 1 minute, then add water and cook 3-4 minutes, stirring constantly until the mixture turns deep red.
Finish the creamy sauce
Lower heat and add heavy cream, stirring until smooth. Add Parmesan cheese and stir well. Taste and adjust salt and red pepper flakes as needed.
Combine pasta and sauce
Add cooked pasta directly into the sauce. Add a splash of reserved pasta water if needed to adjust consistency. Toss well to coat evenly.
