Creamy Cajun Sausage Pasta

Instructions
Sear the sausage
Sear sliced andouille sausage in a hot pan until caramelized on both sides.
Remove sausage and set aside
Transfer the caramelized sausage to a plate and set aside.
Sauté shallots and garlic
In the same pan, cook diced shallots and minced garlic in olive oil until fragrant.
Add spices and tomato paste
Stir in smoked paprika, smoked garlic powder, chicken bouillon, salt, tomato paste and sun-dried tomatoes.
Simmer the sauce
Pour in chicken broth and heavy cream. Bring to a gentle simmer and cook until slightly thickened.
Melt in the parmesan
Gradually stir in grated parmesan until the sauce becomes thick and creamy.
Combine sausage and pasta
Return the sausage to the pan along with cooked pasta and toss everything together.
Garnish and rest
Finish with chopped parsley and let the pasta sit for a few minutes before serving.
