Birria Grilled Cheese
Mexican-inspired grilled cheese with rich beef birria consomme
Crispy toasted bread filled with tender shredded beef birria and melted jack cheese, served with a fragrant chile consomme for dipping.

beef broth
600 ml
mexican oregano

shredded jack cheese (shredded)

Instructions
Preheat the fire
Preheat your fire to medium high temperature (around 190°C).
Char the chiles and garlic
Add ancho chile, guajillo chile and garlic cloves to dutch oven and char for 30-45 seconds per side.
Simmer chiles in water
Add water to the skillet and let simmer over the fire for 7-8 minutes.
Blend chile paste
Remove from heat. Add chiles, garlic, onion and chipotle in adobo to food processor. Blend until completely smooth.
Season the beef
Add short ribs to a bowl with oil and season liberally with salt, pepper and garlic powder.
Sear the beef
Sear off each side of the beef in the dutch oven until browned. Work in batches if needed.
Braise the beef
Add all short ribs, chile paste, beef broth and braising seasonings to the dutch oven. Cover and simmer until fork tender (3.5-4.5 hours). Skim fat as needed.
Prepare consomme
Remove beef, discard bones, bay leaves and cinnamon sticks. Strain braising sauce into a clean consomme. Shred the beef.
Preheat skillet
Preheat cast iron skillet over medium high heat (about 175°C) for direct cooking. Add oil and clarified butter 2 minutes before cooking.
Assemble grilled cheese
Lay out bread, cover with cheese, add shredded beef, more cheese, and top with bread.
Toast the sandwich
Toast the grilled cheese in the skillet for 45-60 seconds per side until golden brown.
Serve
Add consomme to a bowl and top with chopped red onions and cilantro. Slice sandwiches and serve with consomme.
