Classic Chocolate Chip Cookies

Instructions
Cream butter and sugars
Add cold cubed butter to a large mixing bowl and whisk until slightly creamy. Add caster sugar and light brown sugar, then whisk until well combined and fluffy.
Add eggs and chocolate
Add eggs, egg yolk, vanilla extract, and chocolate chunks or chips to the butter mixture. Whisk until fully incorporated.
Incorporate dry ingredients
Add flour, baking powder, baking soda, and salt to the wet mixture. Gently mix until just combined - do not overmix.
Portion and freeze dough
Divide dough into 75-80g balls. Place on a tray and freeze for at least 30 minutes, or overnight for best results.
Preheat oven
Preheat oven to 165-170°C.
Bake cookies
Bake for 10-15 minutes until tops are lightly golden while centers remain soft.
Cool and serve
Remove from oven and let cool slightly. Serve warm with ice cream.
