Instructions
Preheat oven
Preheat the oven to 180°C and line a baking dish with parchment paper.
Prepare sweet potato
Cook sweet potato until soft, then mash it into a smooth puree.
Mix wet ingredients
In a large bowl, combine the mashed sweet potato, maple syrup, melted coconut oil, eggs, and vanilla extract until smooth.
Mix dry ingredients
Add almond flour, cocoa powder, baking powder, and salt to the wet mixture and stir until well combined.
Add chocolate chips
Fold in the dark chocolate chips if using.
Bake the brownies
Pour the batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes until a toothpick comes out with a few moist crumbs.
Cool and serve
Allow brownies to cool in the pan for 10 minutes before cutting into squares and serving.
Storage
Store in an airtight container. Can be enjoyed cold or at room temperature.
