Prepare cherry sauce

Defrost cherries. In a small pot combine cherries, sugar, balsamic vinegar and rosemary sprig. Bring to boil on medium heat and simmer 10-12 minutes until thickened. Remove rosemary and let cool.

Sauce is ready when cherries are soft and syrup thickens and coats the spoon

Prepare patties

Pass beef and beef fat through meat grinder or finely grind with blender. Add finely grated blue cheese, salt and black pepper. Mix well and form 2 flat patties 2 cm thick.

For juiciness use 20-25% fat in ground meat. Do not grind meat too fine

Fry patties

Heat pan with little oil on high heat. Fry patties 4-5 minutes on each side until crust forms. Internal temperature should reach 63°C. Let patties rest 3 minutes.

Prepare buns

Cut buns half and toast them on pan cut side down 1-2 minutes until crisp.

Assemble burgers

On bottom bun spread cream cheese. Add arugula, then patty, pour cherry sauce on top. Cover with upper part of bun.
