Layered Marble Cake with Chocolate Cream Cheese Frosting

Instructions
Preheat oven and prepare pans
Preheat the oven to 175°C. Grease and flour two 20 cm round cake pans and line the bottoms with parchment paper.
Mix dry ingredients for vanilla batter
In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
Mix wet ingredients
In a separate bowl, whisk the eggs, oil, sour cream, milk and vanilla extract until smooth.
Combine wet and dry ingredients
Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
Bloom cocoa powder
In a small bowl, mix cocoa powder with hot coffee and the extra sugar until smooth and glossy.
Create marble effect
Divide the vanilla batter evenly between the two pans. Drop spoonfuls of the chocolate mixture on top and swirl gently with a knife or skewer to create a marble pattern.
Bake the cakes
Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
Cool the cakes
Allow cakes to cool in the pans for 10 minutes, then remove to a wire rack to cool completely.
Make the frosting
Beat cream cheese and butter until smooth. Gradually add powdered sugar, cocoa powder and vanilla, beating until light and fluffy.
Assemble and frost the cake
Place one cake layer on a serving plate. Spread a layer of frosting on top, then add the second layer. Frost the top and sides of the cake.
