Instructions

Prepare noodles

Soak rice noodles in warm water until softened but still firm.

Mix sauce

Combine tamarind paste, fish sauce, palm sugar, lime juice and chili flakes in a bowl.

Prep ingredients

Mince garlic and shallots. Chop green onions. Cut tofu into small cubes.

Cook shrimp and tofu

Heat oil in a wok. Cook shrimp until pink and tofu until golden. Remove and set aside.

Scramble eggs

Push ingredients aside, add eggs and scramble until just set.

Combine everything

Add drained noodles, sauce and bean sprouts. Toss everything together over high heat for 2 minutes.

Finish and serve

Add cooked shrimp, tofu, chopped green onions and peanuts. Toss briefly and serve immediately with lime wedges.

Reheat: Microwave 2-3 minutes or wok on medium heat

Best eaten fresh. Reheat gently to avoid overcooking shrimp.
