Boil the ramen

Bring a large pot of salted water to a boil over medium-high heat and cook the ramen noodles. Reserve a small amount of pasta water before draining.

Prepare aromatics

Mince the garlic and shallot finely. Place in a medium bowl along with the red chili flakes and sesame seeds.

Make the chili oil

Heat the sesame oil until hot, then carefully pour it over the bowl of aromatics. The mixture will sizzle. Stir well and add a splash of soy sauce.

Combine noodles with chili oil

Add the reserved pasta water to the noodles, then transfer everything to the chili oil bowl. Mix thoroughly to coat the noodles evenly.
