Instructions
Prepare vegetables
Dice half an onion and mince 3 cloves of garlic.
Fry onion
Heat olive oil in a pan over medium heat and fry the diced onion for about 2 minutes.
Prepare tortilla pieces
Cut one tortilla into small pieces and dice the leftover tortilla.
Fry tortilla pieces
Add the diced tortilla pieces to the pan and fry for 2 minutes.
Cook the beef
Add ground beef to the pan and fry for 3-5 minutes until browned. Season with salt, black pepper, and paprika.
Add herbs
Finely chop parsley and add to the pan. Mix and set the filling aside.
Assemble the tortilla
Place the filling on one tortilla, sprinkle with mozzarella cheese. Cover with the second tortilla and fold the edges. Sprinkle more cheese on the edges.
Fry the tortilla wrap
Heat olive oil or butter in a pan. Transfer the tortilla to the pan, brush with oil, and fry for 3 minutes. Flip using the plate and fry for another 2-3 minutes until crispy.
