Instructions
Preheat oven and prepare baking sheet
Preheat the oven to 175°C and line a baking sheet with parchment paper.
Cream butter and sugar
In a large bowl, beat the softened butter and sugar together until light and fluffy.
Add egg and vanilla
Beat in the egg and vanilla extract until well combined.
Combine dry ingredients
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Combine wet and dry ingredients
Gradually mix the dry ingredients into the wet mixture until a soft dough forms. Do not overmix.
Shape and roll cookies
Scoop dough and roll into balls, then roll each ball in granulated sugar. Place on the prepared baking sheet.
Bake cookies
Bake for 8-10 minutes until the edges are lightly golden but centers are still soft.
Cool cookies
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
