Mediterranean Roasted Potato & Sweet Potato Tian

Instructions
Preheat oven
Preheat oven to 200°C and lightly oil a baking dish.
Arrange potatoes
Arrange potato and sweet potato slices upright in alternating rows in the prepared baking dish.
Season and drizzle
Drizzle with olive oil, then scatter cranberries, rosemary, thyme, salt, and pepper over the potatoes.
Bake covered
Cover with foil and bake for 35 minutes.
Bake uncovered
Remove foil and bake 15–20 minutes more until the potatoes are tender and lightly crisp on top.
Garnish and serve
Garnish with fresh parsley and serve hot.
