Preheat oven

Preheat oven to 180°C.

Prepare honey butter mixture

In a bowl, add honey, melted butter, brown sugar and vanilla bean paste. Mix well until combined.

Coat brioche slices

If using thin brioche, stack two slices and dip both sides into the honey mixture, coating edges as well. If using thick brioche, dip one slice at a time. Place on tray lined with baking paper.

Bake the toast

Bake for 20 minutes or until golden, flipping halfway through.
