Instructions
Marinate the chicken
Combine all marinade ingredients and coat the chicken thighs thoroughly. Refrigerate for at least 1 hour or up to overnight for maximum flavor.
Prepare the dredge mixture
Mix all dredge ingredients in a large bowl until well combined.
Heat the frying oil
Heat vegetable oil in a heavy pot or deep fryer to 175°C (350°F).
Double dredge the chicken
Remove chicken from marinade, let excess drip off, then coat thoroughly in flour mixture. Return to marinade and dredge in flour again for extra crispy coating.
Fry the chicken
Fry chicken in batches at 175°C for 5-7 minutes until golden brown and internal temperature reaches 74°C (165°F). Drain on wire rack.
Prepare garlic butter
Mix softened butter with grated garlic and minced parsley for brushing the buns.
Toast the slider buns
Brush garlic butter on inner halves of brioche buns and toast in oven at 175°C for 8-10 minutes until golden.
Make the hot honey glaze
Combine all hot honey ingredients in a small saucepan and simmer gently for 2-3 minutes until well combined and slightly thickened.
Glaze the fried chicken
Brush or toss the hot fried chicken with the prepared hot honey glaze while still warm.
Prepare the buttermilk ranch
Mix all ranch ingredients in a bowl until smooth and well combined. Season to taste.
Assemble the sliders
Build each slider: toasted bun bottom, ranch dressing, glazed chicken, pickles, and top bun brushed with remaining garlic butter.

Storage
Best enjoyed fresh. Chicken can be reheated but won't be as crispy. Store components separately if making ahead.
