Instructions
Prepare the chicken
Season chicken breasts generously with salt and black pepper on both sides.
Sear the chicken
Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side until golden brown. Remove chicken to a plate.
Sauté aromatics
In the same skillet, add diced onion and cook for 3-4 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
Build the sauce
Add sun-dried tomatoes, chicken broth, heavy cream, parmesan, oregano, and chili flakes. Stir to combine and bring to a simmer. Scrape any browned bits from the bottom of the pan.
Simmer chicken in sauce
Return chicken breasts to the skillet, nestling them into the sauce. Spoon sauce over chicken. Cover and simmer for 8-10 minutes until chicken reaches 75°C internal temperature.
Serve
Remove from heat. Serve chicken with creamy sauce spooned over top. Garnish with extra parmesan and fresh herbs if desired.
Storage
Best eaten fresh. Sauce may separate when reheating - stir in splash of cream.
