Grandma's Classic Pancake Recipe

Instructions
Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
Blend Wet Ingredients
In a separate bowl or liquid measuring cup, whisk the milk, egg, melted butter, and vanilla (if using) until smooth.
Combine and Stir
Pour the wet ingredients into the bowl with the dry ingredients. Using a spatula or whisk, gently mix until just combined. Be careful not to overmix—the batter should be slightly lumpy for lighter pancakes.
Preheat Griddle or Pan
Heat a nonstick griddle or large skillet over medium heat. Add a bit of butter or spray to coat the surface lightly.
Cook First Side
Scoop about 1/4 cup of batter for each pancake onto the hot surface, spacing them apart. Watch for bubbles forming on the surface and the edges looking set (about 2–3 minutes).
Flip and Finish
Flip gently with a spatula, and cook the other side for about 1–2 minutes more until golden brown.
Serve Warm
Transfer pancakes to a plate. Keep them warm in a low oven while you finish the batch if desired. Serve with syrup, butter, fresh fruit, whipped cream—or any of your favorite toppings.
Storage
Stack cooled pancakes with parchment squares between them before freezing. Reheat in toaster or microwave.
