Creamy Shrimp Pasta

Instructions
Prepare ingredients
Peel and devein shrimp if needed. Finely chop onion and garlic. Dice tomatoes. Grate hard cheese.
Cook pasta
Cook pasta in salted boiling water until al dente. Drain and set aside.
Sear shrimp
Heat sesame oil in a pan. Add shrimp, season with lemon pepper and soy sauce. Sear 2-3 minutes until pink. Remove from pan.
Sauté aromatics
In the same pan, melt butter. Add chopped onion and garlic. Sauté until fragrant and translucent.
Add tomatoes and spinach
Add diced tomatoes and spinach. Cook until spinach wilts and tomatoes release juice.
Make creamy sauce
Pour in cream, season with salt and pepper. Simmer 2 minutes until slightly thickened.
Combine and finish
Return shrimp to pan. Add cooked pasta and grated cheese. Toss gently until cheese melts and everything is coated.
Serve
Plate the pasta and garnish with fresh parsley.
