Avocado Cucumber Salad with Feta

Mini cucumbers (sliced)
400 g
Avocado (diced)

Feta cheese (crumbled)
150 g
Red onion (thinly_sliced)

Fresh dill (chopped)
15 g
Fresh basil (chopped)

Lemon Vinaigrette
Lemons (juiced)

Olive oil
45 ml

Instructions
Prepare vegetables
Slice mini cucumbers into thin rounds. Dice avocados into cubes. Thinly slice red onion.
Chop herbs
Finely chop fresh dill and basil.
Make lemon vinaigrette
In a small bowl, whisk together fresh lemon juice, olive oil, salt and black pepper.
Assemble salad
In a large bowl combine sliced cucumbers, diced avocado, crumbled feta, red onion, and chopped herbs. Pour over the lemon vinaigrette and gently toss to coat.
Serve immediately
Transfer to serving plates and enjoy fresh.
