Instructions
Prepare cookie dough
Brown the butter and let it cool slightly. Whisk with both sugars until glossy. Add eggs and vanilla, then sift in dry ingredients and fold in chocolate chips. Chill the dough.
Preheat oven and prepare pan
Preheat the oven to 175°C and line an 8x8 baking pan with parchment paper.
Prepare brownie batter
Melt butter with chocolate chips, whisk in olive oil and cocoa powder. In a separate bowl whisk sugars, eggs and vanilla. Combine both mixtures and fold in flour.
Assemble brookies
Pour half the brownie batter into the prepared pan. Distribute chunks of cookie dough, then pour remaining brownie batter. Finish with more cookie dough pieces and chocolate chunks on top.
Bake
Bake at 175°C for 30–40 minutes until edges are set and center is slightly soft. Toothpick should come out with moist crumbs.
Cool and slice
Cool completely before slicing for clean layers.
