One Pan Chicken Fajita Rice

Instructions
Prepare ingredients
Wash and slice the bell peppers and onion into strips. Mince the garlic. Dice the tomatoes.
Fry the chicken
Heat olive oil in a large pan. Add chicken breast cut into strips and fry until golden.
Add vegetables
Add onion, bell peppers and garlic to the pan. Stir-fry until vegetables are soft.
Add spices and tomatoes
Add paprika, cumin, salt, black pepper and diced tomatoes. Stir well.
Add rice and water
Add rice and 500 ml water to the pan. Stir to combine.
Cook the rice
Bring to boil, then cover the pan with lid and simmer on low heat for 18 minutes.
Rest and serve
Remove from heat and let rest for 5 minutes before serving.
