Instructions
Preheat oven
Preheat oven to 180°C and line a baking sheet with parchment paper.
Cream butter and sugars
In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
Add egg and vanilla
Beat in the egg and vanilla extract until well combined.
Mix dry ingredients
In a separate bowl, whisk together flour, baking soda, and salt.
Combine wet and dry
Gradually add the dry ingredients to the wet mixture and mix until just combined. Fold in chocolate chips.
Prepare graham cracker base
Place graham cracker squares on the prepared baking sheet, spacing them evenly.
Form cookie dough balls
Scoop about 2 tablespoons of dough and flatten slightly. Place a marshmallow in the center and wrap the dough around it, sealing completely.
Bake the cookies
Place each dough ball on top of a graham cracker square. Bake for 10-12 minutes until edges are golden brown.
Cool cookies
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
