Crispy Beef Tacos

Instructions
Prepare the beef filling
Chop onion and mince garlic. In a pan over medium heat, sauté onion and garlic in 1 tbsp oil until softened, about 3 minutes. Add ground beef and cook until browned, breaking it up with a spatula. Drain excess fat.
Season the beef
Stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes until thickened. Mix in half the shredded cheese until melted. Remove from heat.
Make cilantro lime sauce
In a bowl, combine sour cream, juice of 1 lime, chopped cilantro, salt and pepper to taste. Mix well and refrigerate until ready to serve.
Fry crispy tortillas
Heat remaining oil in a clean pan over medium-high heat. Fry each tortilla for 30-60 seconds per side until golden and crispy. Drain on paper towels.
Assemble and serve
Fill each crispy tortilla with beef mixture, top with remaining cheese. Drizzle with cilantro lime sauce. Serve immediately.
