Instructions
Prepare the batter base
Whisk the eggs with salt and Sugar until well combined.
Add milk and flour
Pour in the milk and whisk again. Gradually add the flour, mixing until the batter is smooth.
Finish the batter
Add the oil and mix well. Then pour in the hot water and whisk until fully incorporated.
Rest the batter
Let the batter rest for 15 minutes to allow the flour to hydrate.
Cook the crepes
Heat a crepe pan over medium-high heat. Pour a ladle of batter and cook until golden brown on both sides.
Serve
Serve the crepes warm with your favourite toppings such as pistachio, hazelnut, chocolate spread, jam or cream.
