red curry paste

Instructions

Brown the beef mince

Add the beef mince to a hot, oiled pan and fry until browned.

Add aromatics and seasonings

Add the garlic, chilli and ginger and fry off for a few minutes. Then add the honey and soy and cook until sticky.

Set beef aside

Remove the beef from the pan and set aside while you prepare the broth.

Fry the curry paste

In a separate pan, add the red curry paste and fry off for a few minutes.

Simmer the broth

Add the coconut milk and stock and stir. Simmer for 3-4 minutes.

Assemble the bowl

Serve the rice, beef mince and then pour over the broth. Top with the cucumber and spring onions.

Fridge: 2 days
Reheat: Microwave 2-3 minutes or reheat gently on the stove

Best enjoyed fresh. Rice and broth can be stored separately to maintain texture.
