Ingredients
Batter
milk
260 ml
vinegar
5 ml
all purpose flour
125 g
cocoa powder
25 g
baking soda
2.5 g
milk powder
30 g
icing sugar

Filling
fresh cream
240 ml
milk chocolate (chopped)

Instructions
Curdle the milk
Add vinegar to the milk and let it sit for 5 minutes until it curdles.
Mix dry ingredients
In a bowl, combine flour, cocoa powder, baking soda, milk powder and icing sugar and whisk thoroughly.
Make the batter
Make a small well in the centre, add the milk-vinegar mixture and whisk until a smooth, lump-free batter with ribbon consistency is achieved.
Cook the pancakes
Heat a griddle or pan on low-medium heat. Pour the batter using a 1/4 cup measure to form equal pancakes.
Flip and finish cooking
Cover with a lid and cook for 3-4 minutes on low heat, flip and cook the other side for 1-2 minutes.
Prepare chocolate filling
Heat cream and chopped chocolate in a microwave in 30-second intervals until melted and combined.
Assemble the cakes
Spread chocolate filling on a pancake and sandwich with another, pressing edges to seal.
