Instructions
Preheat oven
Preheat oven to 190°C. Line baking sheets with parchment paper.
Cream butter and sugars
In the bowl of a stand mixer, beat together the softened butter, granulated sugar and brown sugar until creamy.
Add eggs and vanilla
Add eggs one at a time, mixing after each addition. Add vanilla.
Combine dry ingredients
In a separate bowl, whisk together flour, baking soda and salt.
Mix dry into wet
Gradually add dry ingredients to wet ingredients and mix until just combined.
Add chocolate chips
Stir in chocolate chips.
Chill dough
Chill dough in refrigerator for 30 minutes.
Scoop dough
Scoop 2-tablespoon sized mounds and place on prepared baking sheets 5cm apart.
Bake cookies
Bake for 10-12 minutes or until edges are golden brown. Centers will look slightly underbaked.
Cool and serve
Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.

Store in airtight container at room temperature for 3 days. Freeze baked cookies or dough balls for up to 2 months.
