Prepare ingredients

Slice onions thinly, cut chicken into strips, mince garlic, and grate parmesan cheese.

Caramelize the onions

Heat olive oil and butter in a large pan over medium heat. Add sliced onions and cook slowly until deeply caramelized, stirring occasionally.

Cook the chicken

Push caramelized onions to one side of the pan. Add chicken strips and sear until golden on all sides.
