Rawa (semolina)
1 cup
Curd (yogurt)
0.5 cup

Coriander leaves (chopped)

ENO fruit salt
1 tbsp
Instructions
Prepare tempering
Heat oil in a pan. Add mustard seeds, chana dal, urad dal and let them splutter.
Add aromatics
Add chopped green chillies, curry leaves and cashews. Sauté for 1 minute until fragrant.
Roast rawa
Add rawa (semolina) to the pan and roast on low flame until it becomes aromatic and light golden (about 3-4 minutes).
Prepare idli batter
Transfer roasted rawa to a bowl. Add curd, salt, chopped coriander leaves and water. Mix well to form a thick batter. Let it rest for 5 minutes.
Add ENO and steam
Just before steaming, add ENO fruit salt to the batter and mix gently. Pour batter into greased idli moulds and steam for 10-12 minutes.
Serve hot
Demould idlis carefully using a wet spoon. Serve hot with sambar and coconut chutney.
