Ingredients

Tempering

Oil15 ml
Mustard seeds1 tsp
Chana dal1 tsp
Urad dal1 tsp
Green chillies2 pcs

Rawa (semolina)1 cup
Curd (yogurt)0.5 cup
Salt1 tsp
Coriander leaves2 tsp

Water0.5 cup
ENO fruit salt1 tbsp

Prepare tempering

Heat oil in a pan. Add mustard seeds, chana dal, urad dal and let them splutter.

Add aromatics

Add chopped green chillies, curry leaves and cashews. Sauté for 1 minute until fragrant.

Roast rawa

Add rawa (semolina) to the pan and roast on low flame until it becomes aromatic and light golden (about 3-4 minutes).

💡 Stir continuously to prevent burning. Rawa should smell nutty and change color slightly.

Prepare idli batter

Transfer roasted rawa to a bowl. Add curd, salt, chopped coriander leaves and water. Mix well to form a thick batter. Let it rest for 5 minutes.

Add ENO and steam

Just before steaming, add ENO fruit salt to the batter and mix gently. Pour batter into greased idli moulds and steam for 10-12 minutes.

💡 Test doneness by inserting a toothpick - it should come out clean.

Serve hot

Demould idlis carefully using a wet spoon. Serve hot with sambar and coconut chutney.
