Ingredients

Prepare tempering

Heat oil in a pan. Add mustard seeds, chana dal, urad dal and let them splutter.

Add aromatics

Add chopped green chillies, curry leaves and cashews. Sauté for 1 minute until fragrant.

Roast rawa

Add rawa (semolina) to the pan and roast on low flame until it becomes aromatic and light golden (about 3-4 minutes).

Stir continuously to prevent burning. Rawa should smell nutty and change color slightly.

Prepare idli batter

Transfer roasted rawa to a bowl. Add curd, salt, chopped coriander leaves and water. Mix well to form a thick batter. Let it rest for 5 minutes.

Add ENO and steam

Just before steaming, add ENO fruit salt to the batter and mix gently. Pour batter into greased idli moulds and steam for 10-12 minutes.

Test doneness by inserting a toothpick - it should come out clean.

Serve hot

Demould idlis carefully using a wet spoon. Serve hot with sambar and coconut chutney.

Reheat: Steamer 5-7 minutes or microwave with water sprinkle 2 minutes

Best eaten fresh. Reheat gently to maintain soft texture.
