Prepare the marinade

Combine buttermilk, minced garlic, grated ginger, soy sauce, salt and black pepper in a bowl.

Marinate the chicken

Place butterflied chicken wings in the marinade and let rest in the refrigerator for at least 15 minutes.

Prepare the dry coating

Mix all-purpose flour, cornstarch and baking powder in a separate bowl.

Coat the chicken

Remove chicken from marinade, allow excess to drip off, then dredge each piece thoroughly in the flour mixture.

Heat oil in a wok or deep pot to 175°C. Fry chicken in batches for 10-12 minutes until golden and cooked through.
