Vegetable rice seasoned with curry powder and stock

Instructions
Prepare the vegetables
Slice the spring onions and dice the red pepper so they are ready to cook.
Cook the vegetables
Warm the oil in a pan, then soften the spring onion and red pepper before adding the peas.
Add rice and seasoning
Stir in the rice, curry powder, stock cube, salt, and pepper so the grains are evenly coated.
Simmer until tender
Pour in the hot water, bring to a boil, then lower the heat and cook until the rice is tender and the liquid has been absorbed.
Finish and serve
Fluff the rice with a fork or spoon, taste, and serve hot.
Storage
Cool quickly, store in an airtight container, and reheat only once.
Notes
• Best served hot as a side dish or a light main.
• For a richer flavour, use homemade vegetable stock instead of a cube.
