Smash Burger
Classic American smash burgers with ultra-crispy edges, melted American cheese, tangy special sauce, and pickles on toasted brioche buns.

Instructions
Slice onion
Thinly slice the onion using a mandolin or sharp knife.
Form beef balls
Divide ground beef into four 4oz (113g) balls.
Make burger sauce
Combine mayonnaise, ketchup, mustard, Worcestershire sauce, pickle juice, smoked paprika, garlic powder, and onion powder in a bowl.
Heat the pan
Heat a cast iron or stainless steel pan over medium-high heat for 2-3 minutes until very hot (water beads up when tested).
Place beef balls
Place beef balls on the hot pan and season generously with salt and pepper.
Smash the burgers
Add a small handful of sliced onions on top of each ball, then smash down hard with a spatula to create thin patties.
Cook first side
Cook the smashed patties for 2 minutes until edges are crispy.
Flip and add cheese
Scrape and flip each patty, add cheese slices, and place buns (top bun first, then bottom) on the pan to toast.
Melt cheese
Cook for 1-2 minutes until cheese is fully melted.
Assemble burgers
Remove patties and buns from the pan. Spread sauce on buns, add pickles, and assemble the smash burgers.
