Watermelon Feta Salad with Mint

Watermelon

Instructions
Prepare the watermelon
Cut the watermelon into bite-sized cubes, removing the rind and seeds if necessary. Place in a large mixing bowl.
Prepare remaining ingredients
Crumble the feta cheese. If using red onion, thinly slice it. Chiffonade the mint leaves (stack, roll, and thinly slice).
Make the dressing
In a small bowl, whisk together olive oil, freshly squeezed lemon juice, salt, and black pepper to taste.
Assemble and serve
Add crumbled feta, sliced red onion (if using), and mint ribbons to the watermelon bowl. Drizzle with dressing and gently toss to combine. Serve immediately.
Storage
Best eaten fresh. If storing, keep dressing separate and add just before serving to prevent sogginess.
