Ingredients

Main Ingredients

Watermelon

800 g

Feta cheese

200 g

Fresh mint leaves

20 g

Red onion

1 piece

Extra virgin olive oil

45 ml

Lemon

1 piece

Sea salt

2 g

Black pepper

1 g

Instructions

1

Prepare the watermelon

Cut the watermelon into bite-sized cubes, removing the rind and seeds if necessary. Place in a large mixing bowl.

5 min
Choose a ripe watermelon for the best flavor and juiciness.
2

Prepare remaining ingredients

Crumble the feta cheese. If using red onion, thinly slice it. Chiffonade the mint leaves (stack, roll, and thinly slice).

5 min
Chiffonade mint by stacking leaves, rolling tightly, and slicing crosswise for fine ribbons.
3

Make the dressing

In a small bowl, whisk together olive oil, freshly squeezed lemon juice, salt, and black pepper to taste.

2 min
Taste and adjust seasoning as needed.
4

Assemble and serve

Add crumbled feta, sliced red onion (if using), and mint ribbons to the watermelon bowl. Drizzle with dressing and gently toss to combine. Serve immediately.

3 min
Don't overdress - watermelon releases its own juice. Serve chilled for best flavor.

Storage

Fridge: 1 days
Reheat: Not required

Best eaten fresh. If storing, keep dressing separate and add just before serving to prevent sogginess.

Notes

Perfect for summer barbecues and picnics.

Can be made ahead but assemble just before serving.
