Brown Butter Chocolate Chip Banana Bread
Equipment
Ingredients
Main Ingredients
ripe bananas (ripe, mashed)
3 piece
unsalted butter (browned)
127 g
large egg (room temperature)
1 piece
brown sugar
150 g
white sugar
50 g
all-purpose flour
188 g
baking soda
5 g
baking powder
2 g
salt
3 g
cinnamon
3 g
vanilla extract
5 ml
semi-sweet chocolate chips
200 g
Instructions
Brown the butter
Add butter to a saucepan over medium heat and stir until it melts, foams, sizzles, and turns golden with a nutty smell.
Cool the browned butter
Pour browned butter into a bowl and place in the freezer for 5 minutes until warm, not hot.
Mix wet ingredients
In a large bowl, mash bananas until mostly smooth. Add 1/2 cup of the browned butter, brown sugar, white sugar, egg, and vanilla. Whisk for 1 to 2 minutes until glossy.
Add dry ingredients
Add flour, baking soda, baking powder, salt, and cinnamon to the wet mixture. Mix very thoroughly until no dry flour remains.
Fold in chocolate chips
Fold in about 1 cup of chocolate chips, saving the rest for topping.
Prepare loaf pan
Preheat oven to 175°C. Line or grease a loaf pan.
Bake the banana bread
Pour batter into the prepared pan and sprinkle remaining chocolate chips on top. Bake for 60 minutes, loosely covering with foil halfway through to prevent over-browning.
Check for doneness
Insert a toothpick into the center. It should come out with a few moist crumbs, not wet batter. If needed, bake an extra 5 to 10 minutes.
Cool and slice
Let cool slightly, then slice and serve.
